And Crémant is basically Champagne, just not from Champagne. In order for the noble sparkling wines from the centre of sparkling wine to have their exclusive name to themselves, French winegrowers had to find a new name for sparkling wines from outside in the 1980s. Since then, all French sparkling wines that were not produced in Champagne and have undergone bottle fermentation for at least nine months have been called Crémant - creamy, high-quality sparkling wine with a smooth acidity.

Crémant - the crème de la crème

Not every sparkling wine from France is allowed to bear the name Crémant. This is reserved only for the best sparkling wines that meet the strict guidelines. First, the entire grape, including stem and stalk, must be pressed. This process is called whole bunch pressing. This is the basis for more freshness, fruit and acidity in the finished Crémant. Only base wines of AOC status may serve as the basis. In addition, a maximum of 100 liters of must per 150 kg of grapes, as well as a maximum of 150 mg/l of sulfur dioxide are allowed. The most important criterion for a Crémant wine is bottle fermentation according to the Méthode traditionelle or Méthode classique. Crémant must be aged for at least 12 months, 9 of them on the lees. Depending on the region, there are several grape varieties. These are mainly local grapes.

Crémant - the mirror of the land

Crémant de Limoux

Crémant de Limoux owes its freshness and character to grape varieties from the Languedoc region. Mainly Chardonnay and Chenin Blanc, plus Pinot Noir and Mauzac as secondary varieties. What is Crémant?
