The home of the Primitivo grape, from which Doppio Passo wine is made, is Apulia on the southern coast of the Adriatic Sea. This is where the Salento Peninsula forms the heel of the Italian 'boot'. Decades ago, the Casa Vinicola Carlo Botter Winery realised that sun was especially loving to the grapevines in Salento. The results are red wines of great intensity, rich in structure and nuances. What does Doppio Passo mean? One process for two fermentations

Doppio Passo can be translated in German as "Doppel-Gang". This describes a very special method

    • a part of the grapes for the Doppio Passo Primitivo is harvested in the second half of August
    • these are made into red wine using the classic method. Fermentation at a maximum of 28 � C lasts at least 15 days
    • three to four weeks after the first harvest, the remaining grapes are now also harvested
    • in the sunny climate of Apulia they have already lost a lot of liquid and concentrated their aromas
    • these grapes, already well dried out, are also fermented
    • once this process is finished, the red wine from the first course is added to the marc of the second one
    • this starts another fermentation, during which color and aroma substances are again extracted from the skins
    • the wine gains body and complexity and the Doppio Passo wine is born

Ripasso and Appassimento

In addition to the Doppio Passo "process," Italian winemakers have tried their hand at other methods. And for the most part have also celebrated great successes with them. In Veneto, for example, the Valpolicella Classico is vinified using the Ripasso method. Here, the pressed marc of the Amarone is added to the finished wine again. A second fermentation takes place. The remaining sugar of the marc transforms into alcohol. Thus, it refines the wine with more aroma, tannins and structure. Once the wine has finished fermenting, it is filtered and bottled. In these, the wine matures for at least 6 months.

The appassimento method is also a wine-making method used mainly in the Veneto region. In this process, the grapes are dried in well-ventilated attics or in the open air for weeks and months. During the rosinization process, the grapes lose liquid and thus concentrate the sugar content.

The main grape variety of Doppio Passo is Primitivo (... is Zinfandel, is Crljenak Kastelanski, is known from here to there)

Doppio Passo wines are vinified almost exclusively from the grape variety Primitivo. However, in addition, sometimes Negroamaro and Malvasia Nera are used. This is the case, for example, with the Doppio Passo Riserva Brindisi. Nevertheless, Primitivo, native to Puglia, is considered the leader in the Doppio Passo process.

The name Primitivo goes back to Francesco Filippo Indelicati, a priest who studied the grape variety in the 18th century. He recognized the advantages of the precocious vines over others. He called it Primativus, the earliest ripening. From then on, Primitivo spread throughout Puglia until it also gained a foothold in America as Zinfandel. The change of name is probably due to a mishap in the labeling of the estates. It was not until 1967 that the connection between Primitivo and the Zinfandel grape variety, which is very popular in America, could be established. Proved by Austin Goheen, expert of the U.S. Department of Agriculture and professor at the University of California.

Primitivo grapes on the vine

For a long time, Primitivo was considered the autochthonous grape variety of southern Italy. There, it has been cultivated for more than 250 years on a few hectares of barren and dry soils. In America, on the other hand, a grape called Zinfandel attracted particular attention during Prohibition. But neither Italy nor America are considered the true home of the grape variety today.

The search for its origin came to a temporary end in the Croatian-Hungarian border region of Crljenak. There the Primitivo is known as Crljenak Kaštelanski, which in turn is identical to the Pribidrag grape variety known since the 15th century. A further branching of the origin is also probable, but has not been proven to date.

Only in the optimal location for the Primitivo are the ampelographers sure. Apulia, with its dry climate and loamy-sandy soils, offers ideal conditions for the grape variety.
