Vinification of the Little Constantia Vin de Constance
This dessert wine clearly focuses on one grape variety, namely Yellow Muscat. For this exceptionally powerful varietal wine from Klein Constantia, only the best harvested material was broughtin.
After harvesting, the grapes immediately reach the winery. Here you are sorted and carefully ground. Fermentation is then carried out in the stainless steel tank at controlled temperatures. After the end of the fermentation, this sweet wine is aged for 3 years in barrels - a combination of new French and Hungarian oak barrels, and barrels of French acacia. This is followed by another 6 months in the steel tank before this dessert wine is filled onto the bottle.

This dessert wine from South Africa should best be enjoyed moderately chilled at 11-13°C. It is perfect as an accompanying wine with banana trifle in the glass, blackberry-cream dessert or coconut kephir cream.
