More information about Vieilles Vignes Savigny-Les-Beaune AOC - Domaine Moillard
With the Domaine Moillard Vieilles Vignes Savigny-Les-Beaune comes a first-class red wine in the swirled glass. Here it reveals a wonderfully bright, light red color. If you give it some air in the glass by swirling, you can perceive a perfect balance in this red wine, because it does not stand out on the glass walls watery or syrupy or liqueur-like. The first nose of the Vieilles Vignes Savigny-Les-Beaune reveals nuances of strawberry jam, sour cherry and red currant. The fruity parts of the bouquet are joined by notes of barrel aging such as even more fruity-balsamic nuances.
On the palate, the Vieilles Vignes Savigny-Les-Beaune of Domaine Moillard starts pleasantly dry, grippy and aromatic. On the tongue, this well-balanced red wine is characterized by an immensely dense and melting texture. Finally, the finale of this well-maturing red wine from the Burgundy wine-growing region, more precisely from Côte de Beaune and Haute Côtes de Beaune, delights with exceptional reverberation. The finish is also accompanied by mineral facets of the soils dominated by slate and limestone.
Vinification of the Domaine Moillard Vieilles Vignes Savigny-Les-Beaune
This balanced red wine from France is made from the Pinot Noir grape variety. In Burgundy, the vines that produce the grapes for this wine grow on soils of limestone and slate. The ripeness of the grapes for this wine from Pinot Noir is influenced to a considerable extent by the climate of the growing region. In Burgundy, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and uniform grapes and a rather moderate must weight. At the time of optimal ripeness, the grapes for the Vieilles Vignes Savigny-Les-Beaune are harvested exclusively by hand without the use of coarse and less selective machines. After the hand harvest, the grapes arrive quickly at the winery. Here they are sorted and carefully broken up. Fermentation follows in large wood at controlled temperatures. Fermentation is followed by aging for several months in French oak barriques.
