The Vie Cave Toscana IGT from Fattoria Aldebrandesca is presented in very intense ruby red in the glass. On the nose, a complex bouquet opens up with fragrances of ripe, dark fruits that alternate gently with spicy aromas, liquorice, coffee and soft vanilla notes. Vinification of the Vie Cave Toscana IGT by Fattoria Aldebrandesca
This red wine is dedicated to the caves, ancient Etruscan passages carved in tufa stone, which can be found throughout Sovana as well as in the Fattoria Aldebrandesca and reveal a very old, branched network of paths.
Malbec, a French grape variety that is still relatively new in Italy, has found an ideal terroir in the volcanic Maremma. The grapes of the vines newly cultivated here a few years ago are harvested optimally ripe at the end of September or the beginning of October. In the wine cellar, they are destemmed and gently pressed and then filled into stainless steel tanks. The first maceration phase takes place at low temperature for 3 to 4 days in order to extract the aromatic substances and the anthocyanins in the shells, then the must temperature is increased so that the yeasts can be added, the alcoholic fermentation takes place at 30 ° together with the continuous gentle maceration for one week in order to obtain the gentle tannins.
After peeling, the wine is transferred to French oak barriques, where malolactic fermentation is carried out, followed by 10 months of ageing. The Vie Cave rests in the bottle for another 14 months before it comes on the market.
