Vinification of the Vega Sicilia Valbuena 5 °
The grapes for the Valbuena 5 ° grow on soils that are mostly rocky and barren and are dominated by limestone with varying proportions of clay, stone and limestone. After harvesting, the grapes are immediately brought to the winery and here cold mashed in the barrel for 3-5 days and then fermented spontaneously with natural yeasts.
After alcoholic fermentation, the Valbuena 5 ° is transferred from Vega Sicilia into new and used barrels (8500 litres down to the barrique) made of French and American oak and aged for about 20 months. After bottling, the wine matures for another three years until Valbuena 5 ° is allowed to leave the winery after a total of five years of maturity.
