The Fasoli Gino Valpo Valpolicella Ripasso is a first-class organic red wine. It reveals a wonderfully dense, ruby red color. At the edges, this Italian red also shows a transition to garnet red. After the first swirl, this red wine reveals a high viscosity, which can be seen in church windows at the edge of the glass. In the glass, this red wine from Fasoli Gino presents aromas of blackberries, sour cherries and blackcurrants, complemented by other fruity nuances. The Fasoli Gino Valpo Valpolicella Ripasso is pleasantly dry to the palate. This red wine is never coarse or austere, but round and smooth. This velvety red wine is full-bodied and multi-faceted on the palate. Thanks to its vital fruit acidity, Valpo Valpolicella Ripasso is exceptionally fresh and lively on the palate. The finish of this mature red wine from the Veneto wine-growing region, more precisely from Valpolicella DOC, is impressive with a remarkable finish.

Vinification of the Valpo Valpolicella Ripasso from Fasoli Gino

The basis for the powerful Valpo Valpolicella Ripasso from Veneto are grapes from the Corvina, Corvinone and Rondinella grape varieties. After the grape harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in small wooden vats at controlled temperatures. The fermentation is followed by ageing for several months in oak barriques.

This red wine from Italy is best enjoyed at a temperature of 15 - 18°C. It goes perfectly with stuffed peppers, boeuf bourguignon or roast veal liver with apples, onions and balsamic vinegar sauce.
