This powerful red wine from France is made from Carignan, Grenache, Mourvèdre and Syrah grape varieties. In Languedoc-Roussillon, the vines that produce the grapes for this wine grow on soils of limestone and schist. When perfectly ripe, the grapes for Unic sans soufre Côtes du Roussillon are harvested exclusively by hand without the use of coarse and less selective machinery. After the harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in concrete at controlled temperatures. The fermentation is followed by aging on the fine lees for several months before the wine is finally bottled.
