The Palomino Fino grapes for the grape-varietal, full-bodied and smooth Tres Palmas of Gonzalez Byass grow in the Spanish wine-growing region DO Jerez.
In the glass, this wine has a dark gold with greenish-golden highlights. Very intense and with a powerful bouquet, this sherry takes its nose - classically spicy aromas reveal themselves after many nuts, fresh bread crusts and hints of dried herbs. Even on the palate, this sherry convinces with strength and a dry, dense and harmonious body. Through the yeast of the cask maturity, the Byass Tres Palmas gains in a present fullness and suppleness. The pleasantly long reverberation is accompanied by nutty nuances.
Vinification of Gonzalez Byass Tres Palmas Fino
In September, the Palomino Fino grapes are carefully harvested, immediately brought to the wine cellar of Gonzalez Byass and gently pressed there. At low temperatures, this sherry is fermented and then sprayed onto 15.5% by volume and placed in Tio-Pepe-Solera.
For10 years, this sherry matures in American oak wooden barrels and is unfiltered after this maturation period and filled unpleasantly by hand onto the bottle.
