pure Tio Pepe Palomino Fino from Gonzalez Byass is a very elegant, finely mineral sherry from the Spanish DO Jerez wine region.
When Manuel Martia Gonzáles took over his first bodega in 1835, his uncle José stood by him as an experienced sherry connoisseur. Uncle José - Tio Pepe - gave Manuel a lot of advice on how to make elegant finos. In his honor, today's world-famous sherry "Tio Pepe" was baptized
.In the glass, this wine shimmers in a light gold tone with straw yellow highlights. The fine bouquet reveals wonderful aromas of juicy apples, fresh almonds and pickled olives. In addition, there are nuances of freshly baked bread and dried herbs, especially lovage. On the palate, this sherry convinces with a lively, very fresh body, which is bound by a racial acidity. Again, aromas of almonds, olives and some apple emerge - accompanied by a breeze of sea salt. The texture is wonderfully light and full-bodied, which then glides into a long, elegant finale.
Vinification of Tio Pepe Gonzalez Byass Palomino Fino
After the careful harvesting of the Palomino Fino grapes, the harvested goods in the wine cellar of Gonzalez Byass are completely destemmed and gently ground. At low temperatures, this sherry is fermented and then sprayed onto a 15 to 15.5 volume percent and placed in oak barrels (600 to 650 liters). Finally, this varietal Palomino Fino matures for 5 years according to the classic method of the winery in the proven brine system.
