The Peppermint Paddock from d'Arenberg from the Australian wine-growing region McLaren Vale in South Australia is a refreshing, colourful and vine variety pure sparkling wine, which is vinified from the grape variety Chambourcin.

The colour alone in the glass is a real highlight - deeply coloured with a light purple mousse. Also in the nose this sparkling wine convinces with intense aromas of sweet wild berries - perfectly accompanied by a hint of Christmas spice. The perlage rises in fine strings of pearls and the palate is greeted by an explosion of fine bubbles at the first sip. The aromas of the nose reveal themselves, which inspire with a very good fruit fullness. The fresh, lively acidity perfectly underlines the aroma and accompanies the crisp finish.

Vinification of d'Arenberg The Peppermint Paddock Chambourcin

The base wine is vinified according to the proven d'Arenberg technique. This means open fermentation, stamping with the feet and pressing in the basket. Afterwards the base wine Likörtirage is added. This addition causes a second fermentation and creates carbon bubbles next to the outstanding colour.

The Name The Peppermint Paddock

In 1989 a vineyard was replanted from Shiraz to Chambourcin - the Shiraz did not feel comfortable at this place. This particular vineyard is surrounded by peppermint - and was the inspiration for the name.
