The Cabernet Sauvignon by Neil Ellis is a varietal, wonderful and multifaceted red wine from the South African wine-growing region Stellenbosch. 

In the glass, this wine has a beautiful cherry red with purple highlights. In the nose a wonderfully fruity aroma unfolds - especially currant, blackberry and plums come to the fore - accompanied by fine hints of pepper and mint. The strong, lush, ripe, yet young palate unfolds a plum fruit underpinned by notes of new oak and delicate tannins. The finale comes with a nice length and subtle oak wort. 

Vinification of Neil Ellis Stellenbosch Cabernet Sauvignon

The Cabernet Sauvignon grapes are immediately brought to Neil Ellis' wine cellar after harvesting. Once there, the mash is first fermented in the stainless steel tanks. For the fine spice, woody nuances and strong colour, the ageing for 18 months in French oak barrels - of which 35% are new wood.
