After being harvested by hand, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation of the base wines. Once the final Prosecco Spumante has been blended, it is matured further using the classic bottle fermentation method. This is followed by bottle ageing for 24 months.
