Solera 1847 Cream from Gonzalez Byass is an aromatic, sweet sherry made from Palomino Fino (75%) and Pedro Ximenez (25%) grapes. The grapes grow in the Spanish wine-growing region DO Jerez. On the occasion of the birth of his first son in 1847, Manuel María González founded the Solera in 1847.
In the glass this wine sparkles in a shining amber with golden highlights. Intense aromas of raisins, dried figs and fine oak notes caress the nose. The palate is taken over by this sherry of a full-bodied, soft body with juicy sweetness. Dried plums blend with aromas of nuts and elegant Solera oak to create an elegant fullness. The aromatic finale has a never-ending finish.
Vinification of Byass Solera 1847 Cream
The grapes for this sweet sherry are harvested and vinified separately. First the berries are fermented in stainless steel tanks and then sprayed to 18 percent by volume. This sherry is then ripened in oak barrels (600 litres) in two separate Solera systems, separated by grape variety. When the first ripening period of about 3 years has been completed, the two sherry varieties are married and placed in the old Solera 1847 for a further 5 years.

This sweet sherry is an excellent companion to all kinds of desserts - whether with fresh fruit, nuts, chocolate or cream ice cream. But this sherry also goes perfectly with small snacks (roasted almonds) or spicy cheeses.
