The Solera 1847 Cream by Gonzalez Byass is an aromatic, sweet sherry made from Palomino Fino (75%) and Pedro Ximenez (25%) grape varieties. The grapes grow in the Spanish wine region DO Jerez. On the occasion of the birth of his first son in 1847, Manuel María González founded the Solera in 1847.
In the glass, this wine sparkles in a shiny amber with golden highlights. Intense aromas of raisins, dried figs and fine oak notes flatter the nose. The palate is taken by this sherry from a full-bodied, soft body with juicy sweetness. Dry plums blend with nutty aromas and elegant Solera oak to create an elegant fullness. The aromatic finale comes with a never-ending reverberation.
Vinification of Byass Solera 1847 Cream
The grapes for this sweet sherry are harvested and vinified separately. First, the berries are fermented in stainless steel tanks and then sprayed on to 18% by volume. Subsequently, this sherry first matures separately in oak barrels (600 litres) in two separate Solera systems. When the first maturation period of about 3 years is complete, the two sherries are married together and placed in the old Solera 1847 for a further 5 years.

This sweet sherry is an excellent accompaniment to all kinds of desserts - whether with fresh fruit, nut, chocolate or cream ice cream. But this sherry also goes perfectly with small snacks (roasted almonds) or spicy cheeses.
