The grapes for this white wine from Spain, after ensuring optimal ripeness, are harvested particularly quickly and at the coolest possible time of day to preserve their freshness. After the hand harvest, the grapes reach the winery by the fastest route. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally drawn into bottles.
