Vinification of the Augustin Sauvignon Blanc
The basis for the balanced Sauvignon Blanc from Franconia are grapes from the Sauvignon Blanc grape variety. The Sauvignon Blanc is an Old World wine in the best sense of the word, because this Frenchman breathes an extraordinary European charm that clearly underlines the success of wines from the Old World. The fact that Sauvignon Blanc grapes thrive under the influence of a rather cool climate also has an influence on the ripening of the grapes that cannot be dismissed. This manifests itself, among other things, in particularly long and uniform grapes and rather moderate alcohol content in the wine. After the hand harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. After the end of fermentation, the Sauvignon Blanc can continue to harmonize on the fine lees for a few months.
