The Santa Digna Cabernet Sauvignon Reserva by Miguel Torres Chile is a wonderful, grape varietal red wine from the Chilean wine region Valle Central.
In the glass, this wine shimmers in a deep ruby red that reflects garnet red to tan. This Chilean red wine pampers with a typical grape bouquet of dark berries (ripe blackcurrants, blackberries), underlined by spicy liquorice notes. Also on the palate is the dark fruit fullness with the fine spice present. The elegant tannins harmonize wonderfully with the silky texture. The finale comes with a nice length.
In Chile, the crossroads that marked the transition from urban to rural areas were called Santa Digna. They acted as a kind of boundary stone that represented the symbol of growth and prosperity and promised all protection that moved from one area to another.
Vinification of the Torres Santa Digna Cabernet Sauvignon Reserva
In Valle Central, the Cabernet Sauvignon grapes grow for this red wine. The berries are harvested from the end of March to the beginning of May with optimum ripeness and immediately brought to the winery. There, the harvested material is first mashed in and fermented at a controlled temperature (25 - 28 degrees Celsius) in the stainless steel tank. The total maceration period for this Chilean wine is 3 weeks. This wine was aged in French oak barrels for a total of 6 months. This red wine will be bottled in May next year.
