The Santa Digna Cabernet Sauvignon Reserva from Miguel Torres Chile is a wonderful red wine from the Chilean wine-growing region Valle Central.
In the glass this wine shimmers in a deep ruby red which reflects garnet red to tan. This Chilean red wine spoils with a typical bouquet of dark berries (ripe black currants, blackberries), underlaid with spicy liquorice notes. Also on the palate the dark fruit fullness with the fine spice is present. The elegant tannins harmonise wonderfully with the silky texture. The finish has a beautiful length.
In Chile, the crossroads that marked the transition from urban to rural were called Santa Digna. They acted as a kind of boundary stone, symbolizing growth and prosperity, promising protection to all who moved from one area to another.
Vinification of the Torres Santa Digna Cabernet Sauvignon Reserva
The Cabernet Sauvignon grapes for this red wine grow in the Valle Central. The berries are harvested from the end of March to the beginning of May at optimal ripeness and immediately brought to the winery. There the grapes are first crushed and fermented at a controlled temperature (25 - 28 degrees Celsius) in stainless steel tanks. The total maceration time for this Chilean wine is 3 weeks. This wine matures in wooden barrels of French oak for a total of 6 months. In May next year this red wine is filled on the bottle.

This dry red wine from Chile goes excellently with braised peppers and aubergines with Mediterranean herbs, spicy bean and lentil stews as well as with a juicy piece of meat from the grill or from the pan.
