Vinification of the Domaine de Nizas Rouge Pays d'Oc
The basis for the first-class and wonderfully powerful Cuvée Rouge Pays d'Oc from Domaine de Nizas are Grenache, Mourvèdre and Syrah grapes. The grapes grow in optimal conditions in Languedoc-Roussillon. The vines here dig their roots deep into soils of volcanic rock. After the hand harvest, the grapes are immediately transferred to the press house. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, the Rouge Pays d'Oc is allowed to further harmonize on the fine lees for a few months.
