Vinification of the Allendorf Quercus Pinot Noir
This balanced red wine from Germany is made from the Pinot Noir grape variety. The grapes grow under optimal conditions in the Rheingau. Here, the vines dig their roots deep into loess soil. After being harvested by hand, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. This is followed by fermentation in small wooden vats at controlled temperatures. At the end of fermentation, the elegant Quercus Pinot Noir is matured for a few months in oak barrels.
