After being harvested by hand, the grapes are transported to the winery as quickly as possible. Here they are selected and carefully crushed. Fermentation then takes place in small wooden vats at controlled temperatures. At the end of fermentation, the organically produced Puro Chianti Rufina Riserva is aged for several months in oak barriques.
