The Pinot Noir Bourgogne of Domaine Moillard from Burgundy presents a bright, light red color in the wine glass. If you give it some air in the wine glass by swirling, you can perceive a perfect balance in this red wine, because it does not stand out watery or syrupy or liqueur-like on the walls of the glass. To the nose, this Domaine Moillard red wine reveals all sorts of blackberries. As if that were not already impressive, the aging in small wooden barrels adds other aromas such as vanilla, toasted wood and licorice.
On the palate, Domaine Moillard's Pinot Noir Bourgogne opens pleasantly dry, grippy and aromatic. Balanced and complex, this velvety and light red wine presents itself on the palate. The final of this youthful red wine from the wine-growing region of Burgundy finally convinces with good reverberation. The finish is also accompanied by mineral hints of the soils dominated by slate and limestone.
Vinification of the Pinot Noir Bourgogne from Domaine Moillard
This red wine clearly focuses on one grape variety, and that is Pinot Noir. Only impeccable grape material was brought in for this exceptionally balanced varietal wine from Domaine Moillard. The grapes grow in optimal conditions in Burgundy. Here, the vines dig their roots deep into soils of limestone and shale. The ripening of the grapes for this Pinot Noir wine is influenced to a very high degree by the climate of the growing region. In Burgundy, the grapes thrive in a rather cool climate, which is reflected, among other things, in particularly long and uniform grapes and a rather moderate must weight. The grapes for this red wine from France, at the time of optimum ripeness, are harvested particularly quickly and at the coolest possible time of day to preserve their freshness. After harvesting, the grapes are immediately taken to the press house. Here they are sorted and carefully broken up. Fermentation then takes place in small wood at controlled temperatures. After the completion of fermentation, the elegant Pinot Noir Bourgogne is aged for several months in French oak barriques.
Food recommendation for the Pinot Noir Bourgogne from Domaine Moillard
This French red wine is best enjoyed tempered at 15 - 18°C. It is perfect as an accompanying wine to spicy curries with lamb, lamb stew with chickpeas and dried figs or Thai cucumber salad.
