After manual harvesting, the grapes are immediately taken to the winery. Here they are sorted and carefully broken up. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of this process, the Pinot Grigio Diamond Edition is allowed to continue to harmonize on the fine lees for a few months.
