The Pinot Brut 2 sparkling wine is a joint project of the wineries Aldinger and Wöhrwag, who have brought the legendary sparkling wine pabst Volker Raumland on board for their grandiose sparkling wines.
In the glass, their Pinot Brut 2 is quite as elegant as it presents itself in the bottle. The color is a lovely straw yellow, the perlage elegant and fine. Delicate strings of pearls work their way from the mousse point in the glass towards the surface and fuel an extraordinary bouquet, which is carried by the finest yeast notes, ripe as well as pickled pears, dried apricots and white.
On the palate, the Pinot Brut 2 from Aldinger and Wöhrwag presents a wonderfully full mouthfeel without "too much" carbonation spoiling the fun and forcing us to take small sips. With Pinot Brut 2, everything is just right, above all the balance. The autolysis aromas are reminiscent of fresh farmhouse bread crust and brioche and make some champagnes for three times the price sweat badly. Big!
Vinification of the Pinot Brut 2 sparkling wine from Aldinger & Wöhrwag
This sparkling wine, made from white Pinot Noir grapes, is the joint project of the Aldinger and Wöhrwag wineries in the Stuttgart area. Both VDP wineries decided that maximum expertise was needed for such a venture, and they logically found it with Volker Raumland, Germany's undisputed sparkling wine master. In 2004, the time had come. The first Pinot Brut saw the light of day. The base wine for Pinot Brut 2 is vinified exclusively in stainless steel tanks. The 2nd fermentation takes place logically in the bottle. Subsequently, Aldingers and Wöhrwags Pinot Brut 2 matures for two whole years on the yeast before the bottles are disgorged and corked.
