The Pietra Bianca Castel del Monte DOC by Tormaresca shines golden yellow in the glass with greenish reflections. The bouquet is complex and nuanced, with citrus and tropical fruit aromas, delicate floral notes and vanilla nuances. On the palate, this excellent white wine from Puglia is fresh and pleasantly tasty, full-bodied and perfectly balanced, at the same time rich and complex, the mineral notes complement each other with elegant impressions of ripe fruits and a slight hint of wood. Vinification of Pietra Bianca Castel del Monte DOC from Tormaresca
Puglia is famous for its red wines, but it is also a region of excellent white wines. This cuvée is made from Chardonnay 90% and Fiano 10% grapes. D
he grapes are harvested and vinified separately. After the harvest, the grapes are gently pressed and the must is cooled to 10° Celsius, which favours the natural clarification of the must. The Chardonnay is then fermented in French and Hungarian oak barrels under controlled temperature, left on the yeasts and undergoes complete malolactic fermentation. The Fiano, on the other hand, is fermented only in stainless steel tanks, thus preserving the freshness and crispness typical of the grape variety. After a few months of ageing in wooden barrels, the Chardonnay is transferred to stainless steel tanks where it is combined with the Fiano. Finally, the Pietra Bianca matures for some time in the bottle before being sold.
This elegant wine is produced in the Bocca di Lupo winery of Tormaresca, in the La Murgia area, in the province of Bari, where the famous Castel del Monte Stauffer Castle can also be found. The name comes from the typical white stone that the farmers come across in their fields and crush. The stone dust seeps into the soil and contributes a considerable part to the taste of the wines maturing here.
