After the harvest, the grapes are taken to the press house as quickly as possible. Here they are selected and carefully broken up. Fermentation follows in large wood at controlled temperatures. At the end of fermentation, the organic Pièce de Roche Aude Hauterive is aged for several months in oak barrels.
