Vinification of the Perdixi Isola Dei Nuraghi from Olianas
This powerful red wine from Italy is produced organically from the Bovale and Carignan grape varieties. After harvesting, the grapes are quickly transported to the winery. Here they are sorted and carefully broken up. This is followed by fermentation in amphorae at controlled temperatures. Fermentation is followed by maturation on the fine lees for several months before the wine is finally bottled.
