.Vinification of the Chianti Classico DOCG by Tenuta Pèppoli
For this Chianti, 90% Sangiovese and a total of 10% Merlot and Syrah are vinified. The grapes are harvested, destemmed, pressed and transferred to stainless steel tanks, depending on the grape variety. The alcoholic fermentation takes place at a controlled temperature between 26 and 28°C in order to obtain the aromatic properties and the fruity and floral notes of the individual grape varieties. The maceration on the shells lasts for 8 to 10 days for the Sangiovese and about 15 days for the other varieties. In this way, the gentle and mild tannins are optimally obtained. After malolactic fermentation, which takes place until the end of winter, the cuvée is formed and the young wine is filled into large barrels of Slavonic oak for the 9 months of ageing, a small part is aged in stainless steel tanks. Bottling takes place just over 1 year after the grape harvest.
