The sherry Bailén Oloroso of Osborne appears in the glass in a bright yellow and unfolds its intense aromas of hazelnut and vanilla. These aromas are accompanied by roasted coffee and cedar.

Production of the Osborne Sherry Bailén Oloroso
After the pressing and fermentation in modern stainless steel tanks and after the addition of wine alcohol to an alcohol content of about 15% by volume, the traditional aging of the wines begins in wooden barrels of about 600 liters.
Maturation takes place in the so-called "solera" process, named after the lowest row of barrels in a pyramid-shaped barrel warehouse. The quantity removed from the solera is replaced from the respective barrel above, with the top row being refilled with fresh distillate. In this way, the sherries move from one barrel to the next over the years, thus preserving their typical character for decades.
