The basis for the balanced Opium Grillo from Sicily are grapes from the Grillo grape variety. After being harvested by hand, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, the Opium Grillo is allowed to continue harmonizing on the fine lees for a few months.
