This soft sherry is fully aromatic on the palate with an intensely nutty note. In the finish, the Old Harvest is present with a fine spice and minerality.
Vinification of the Old Harvest Pedro Ximénez D.O. by Ximénez-Spinola
This sherry uses a Solera base from 1964. After the hand-picking, the grapes are dried in the sun for 3 days and the must is fermented in barrels after pressing until it reaches 17% vol. Then comes the basic sherry in the 1964 Solera - 100% Pedro Ximénez. Every year, the Solera is filled with selected must in addition to dry base wine, so that a residual sugar content of 45 g/l is reached and maintained. The goal is not to let the oxidative notes or the oak wood become too dominant, but to balance everything well.
