When perfect physiological ripeness is assured, the grapes for Napier Single Vineyard Cabernet Sauvignon are harvested exclusively by hand without the aid of crude and less selective machinery. After the hand harvest, the grapes arrive quickly at the winery. Here they are selected and carefully crushed. Fermentation follows in 225-liter barriques and stainless steel tanks at controlled temperatures. The fermentation is followed by aging .
