The Reserve Cabernet Sauvignon from Robert Mondavi is an outstanding, excellent red wine cuvée made from the Cabernet Sauvignon (93%), Cabernet Franc (6%) and Petit Verdot (1%) grape varieties.
In the glass this wine shines in a deep garnet red with purple reflections and dark red core. The nose reveals an intense firework of aromas: violets and lavender combine with sweetly ripened black currants - accompanied by hints of laurel leaves, graphite and spicy notes of oak wood.
The taste is in no way inferior to the bouquet: On the palate there are expressive notes of juicy blueberries, ripe blackberries, blackcurrants and plums. This is accompanied by filigree notes of fresh herbs, liquorice and a present minerality. The impressive aromatic fullness merges with the juicy, opulent body, which is encased in a powerful, multi-layered texture. The tannins are rich and sweetly matured and accompany the very long, smooth and elegant finish.
Vinification of the Mondavi Cabernet Reserve
This cult wine was made from the grapes of the legendary To Kalon vineyard, considered the best terroir in North America for Cabernet Sauvignon. The harvest in October is carried out exclusively by hand in small boxes. Once in the To Kalon cellar, the grapes are strictly selected.
The berries are traditionally fermented in oak barrels. The mash is not pumped, but transported by gravity and gently pressed in classic basket presses. The long maceration period of 37 days removes the soft tannins, the wonderful aromatic fullness and the strong colour from the berry skins. Finally, this wine matures for a total of 18 months in French oak barriques (100% new wood).

This dry red wine from the USA is an excellent accompaniment to wild duck fresh from the oven, roast goose with red cabbage and dumplings, wild ragout with homemade ribbon noodles or game dishes in cranberry sauce. We recommend that you decant this red wine for 2 hours before enjoying it.
