The Muffato della Sala Umbria IGT by Castello della Sala shines intensely golden yellow in the glass. On the nose, the muffato delights with delicate and elegant aromas, floral notes but above all ripe fruits, apricot and peach, citrus fruits, complemented by salty and mineral nuances. On the palate, the complex play of aromas continues, sweetness and freshness complement each other harmoniously and give this noble sweet wine its fine texture and pleasant full-bodied character. The finish is long with a delicately spicy, fresh and harmonious aftertaste.
Vinification of the Muffato della Sala of Castello della Sala
The unique Italian dessert wine Muffato della Sala is vinified from grapes that are harvested at the end of October, early November, after the Botrytis cinerea has developed with the morning autumn mists, the so-called noble rot, which reduces the water content of the grapes and concentrates aromas and sugar content. This gives the resulting Muffato della Sala a harmonious and distinctive taste. The first vintage was vinified in 1987 and was then composed of Sauvignon 50%, Grechetto 30% and Drupeggio 20&´%. In the following years the composition was varied, until today's cuvée of Sauvignon Blanc 60% and 40% Traminer, Riesling, Sémillon and Grechetto.
The grapes are harvested manually, picked several times in the same vineyard, depending on the occurrence of noble rot on the individual grapes. In the wine cellar, a further manual selection takes place before pressing. The must then ferments for 18 days at a controlled temperature of approx. 17°C. The still sweet wines thus obtained are then transferred to French oak barriques from Allier and Tronçais and aged for 6 months, followed by the formation of the cuvée from the individual wines and further ageing and harmonization of the muffato for a few months in stainless steel tanks before it is finally bottled.
The Muffato della Sala is an exceptional and unique terroir wine, produced only in very limited quantities and only in the best vintages.
