The Morellino di Scansano Riserva DOCG by Fattoria Le Pupille appears in a dark grenade in the glass. Vinification of Morellino di Scansano Riserva DOCG by Fattoria Le Pupille
The Riserva represents the roots of the Fattoria Le Pupille. It was the first wine to leave the winery in 1982 and dates back to 1978, the year IN which the DOC Morellino di Scansano was created. The oldest vineyards are on average 30 years old up to the younger vineyards of 2002, at an altitude of 50 to 250 m above sea level.
Morellino Riserva is vinified from 85% Sangiovese and 15% Cabernet Sauvignon. The manual harvest takes place at the end of September for the Sangiovese and in the first half of October for the Cabernet Sauvignon. Only the best grapes are processed. After maceration on the dishes for a period of 20 days, temperature-controlled fermentation and complete malolactic fermentation in stainless steel follow. The subsequent ageing over 15 months takes place in large 10-20-40 hl oak barrels. A total of 78,000 bottles are produced.
