.Vinification of Le Pupille Morellino di Scansano DOCG
The Morellino is the figurehead of Fattoria Le Pupille. The first vintage produced was in 1985, since then this terroir wine from Maremma accompanies the history of the winery.
The grapes for the Morellino di Scansano, 85% Sangiovese, 10% Alicante and 5% Ciliegiolo, grow in various vineyards of the estate at 50 to 250 m asl, the soils vary from clay, clay with iron content to structured sandstone soils. The grapes are harvested from September to October, depending on the degree of ripeness. After manual harvesting, the grapes macerate with the skins for 15 days, fermentation takes place at a controlled temperature in stainless steel tanks. Subsequently, the Morellino matures for 8 months mostly in stainless steel, a small proportion in second layer barriques.

This magnificent elegant red wine from southern Tuscany goes perfectly with pasta and rice with flavour-intensive sauces and main courses with meat as typical of Maremma. At a temperature of 18°, it is also perfect as an aperitif.
