Vinification of the Montes Outer Limits Pinot Noir

This balanced red wine from Chile is made from the Pinot Noir grape variety. The fact that the Pinot Noir grapes thrive under the influence of a rather cool climate has an influence on the ripening of the grapes that cannot be dismissed. This results, among other things, in particularly long and even grapes and rather moderate alcohol content in the wine. At the time of optimal ripeness, the grapes for the Outer Limits Pinot Noir are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After harvesting, the grapes reach the winery by the fastest route. Here they are selected and carefully crushed. Fermentation follows in stainless steel tanks and small wood at controlled temperatures. After its end, the Outer Limits Pinot Noir is aged for another 12 months in French oak barrels.

This red wine from Chile is best enjoyed at a temperate 15 - 18°C. It is perfect as an accompanying wine to duck breast with sugar snap peas, vegetable couscous with beef meatballs or Thai cucumber salad.
