The Montes Folly is a varietal Syrah and owes its name to the highest and steepest hillsides in the Valle de Colchagua. Because with a gradient of over 45 degrees, it's just crazy (= folly) to plant vines there. But confidence in Aurelio Montes was greater and so the employees implemented this bizarre yet grandiose idea.
This Chilean red wine comes out with a rich, ink-dark, ruby red to almost black color. The bouquet exudes intense aromas of ripe blueberries with hints of lavender. The aromas of the nose are underlined by notes of toast, white pepper and some leather.
On the palate there is a sensual, juicy and seductive character. Multilayered notes of juicy plums, ripe raspberries and cassis liqueur unfold. The perfectly structured tannins are harmoniously integrated into the firm and muscular body. The finale convinces with a magnificent length and unforgettable balance.
Vinification of Montes FollyThe
Syrah grapes are selectively harvested by hand in the cool hours of the night. In the wine cellar, a further selection of the harvested material takes place, so that only the best and healthiest grapes are fermented. First the grapes are lightly ground, then mashed. The flow is drained (approx. 20%) and pumped back over the mash - so a maximum of dyes, aromas and tannin can be extracted from the berry skins.
At the beginning of fermentation, the temperature is up to 30°C and then drops to 25°C. Only natural yeasts from the vineyards are used for the fermentation.
The ageing of this dry red wine takes place for 18 months in new French oak barrels. Finally we fill this red wine unfiltered on the bottle.
Food recommendation for the Folly of Montes
This dry red wine from Chile goes perfectly with T-bone steak, game dishes (roe deer leg, wild boar ragout, wild fowl) with mushrooms, spicy casseroles and spicy beef stews or even medium-ripe cheeses.
