Vinification of the Cipresso Montepulciano d'Abruzzo

The hand-harvested fully ripe grapes of the Cipresso winery are first destemmed, crushed and the resulting must is fermented in stainless steel tanks under temperature control. The must is then pressed and this wine ages in tanks for a while.
