The grapes grow on loose, easily warmed marl soil on a slope. After manual harvesting, the grapes are destemmed and remain in contact with the skins for 8 hours. Only then are they gently pressed. The must is clarified by natural sedimentation, followed by fermentation at a controlled temperature.
