Vinification of the Marchese Antinori Chianti Classico Riserva DOCG by Tenuta Tignanello
This Chianti Classico Riserva presents the Sangiovese of this wine-growing region in all its quality and elegance. For this wine, at least 90% Sangiovese and a maximum of 10% Cabernet Sauvignon and other local red grape varieties are vinified.
Upon arrival in the wine cellar, the grapes are destemmed and then gently pressed. The must is then filled into stainless steel tanks in which the alcoholic fermentation takes place. During maceration on the peels, the Remuage and Délestage techniques are applied very gently to ensure intensive extraction while maintaining elegance and softness of the tannins. After malolactic fermentation, which took place spontaneously until the end of the year, the cuvée is formed and the wine continues its ageing in French and Hungarian oak barriques for a period of one year, followed by a further 12 months of bottle storage.
The Marchese Antinori Riserva is one of the historic wines of the Antinoris. It is produced only in the best years, from the best vineyards of the Badia a Passignano, Pèppoli and Tignanello wineries. Since 2011, the grapes come exclusively from the Tenuta Tignanello, in whose cellar it is also grown.
