Leonor Palo Cortado by González Byass is a complex sherry made exclusively from the Palomino Fino grape variety grown in the Spanish DO Jerez wine region.
In the glass, this wine shimmers in a bright mahogany with a brick-red edge. The bouquet reveals intense, multi-layered aromas of walnuts and hazelnuts - accompanied by notes of the finest oak wood and subtle hints of bitter orange. On the palate, this sherry is wonderfully dry and presents a velvety, soft texture that harmonizes perfectly with the aromas of the nose. The long, aromatic finale is accompanied by a nutty touch.
Vinification of the Byass Palo Cortado Leonor
After the careful harvesting by hand of Palomino Fino grapes, the harvested goods are brought to the wine cellar of Gonzalez Byass. There the berries are gently pressed. At low temperatures, this sherry is fermented and then sprayed on to 18% by volume and placed in the top row of barrels of the Leonor Solera. This sherry matures for about 12 years in American oak Solera barrels before this wine is bottled.
