Vinification of Tormaresca Kaloro Moscato di Trani DOC
This traditional sweet wine from Trani in Puglia is made from the white Moscato grape, which grows near the town of the same name. The Moscato grapes are harvested manually when they have reached the optimum ripeness and are air-dried on straw mats over a period of 15 days. On the one hand, the drying process increases the sugar content of the grapes, on the other hand it enhances the aromas of jam and honey, which make up part of the fine complex notes of this wine.
The destemming is followed by gentle pressing and temperature-controlled alcoholic fermentation at 18-20 ° C. The Moscato is then aged for one year in stainless steel tanks in order to compress the aromatic and qualitative potential of the grape variety as far as possible, followed by a further 12 months of ageing in the bottle. Only then is the Kaloro Moscato di Trani DOC ready to be sold.
The name of the dessert wine Kaloro evokes memories of the warmth of the Puglia region, the golden yellow colours of the sun-drenched landscapes. Moscato is one of the most appreciated grape varieties in this region due to its natural sweetness and characteristic aromas, but also for its freshness and present acidity, which make it unique among southern Italian sweet wines.
