Kaiken Brut is a very elegant sparkling wine from the Argentine wine region Mendoza - Uco Valley, which is vinified according to the Champenoise method.

In the glass, this wine shimmers in a subtle gold with glittering reflections. The pearl layer is long-lasting and rises in uniform pearl cords. The complex aroma delights the nose with notes of green apples and mineral notes. Add a buttery touch. On the palate, this Argentine sparkling wine is wonderfully refreshing, despite the strong body. The lively acidity harmonizes wonderfully with the elegant body and the very good structure that Pinot Noir brings with it. The finale comes with beautiful length and nutty nuances. 

Vinification of the brood Cake

The

grapes Pinot Noir (70%) and Chardonnay (30%) grow at 1400 m above sea level in Gualtallary. 

This sparkling wine is vinified according to the traditional methods (Méthode champenoise). The must for this wine is first fermented in stainless steel tanks. For the second fermentation, the base wine is bottled with the addition of the filling dosage (yeast and sugar) and matured in the Montes wine cellar for a total of 24 months. Regular shaking and turning gradually collects the yeast, which was initially on the bottom, in the neck of the bottle.

Finally, this sparkling wine is degorged. The yeast plug is frozen in the neck of the bottle and the bottle is opened. The shortage caused by opening is filled with a shipping dosage (sugar and wine).

Food recommendation for the brood Cake

This Argentinian sparkling wine is a great accompaniment to fresh oysters, lobsters and light fish dishes. But this wine is also a treat for desserts with fresh fruit.
