Kaapse Vonkel Brut Sparkling Wine from Simonsig Wine Estate is the first sparkling wine produced in South Africa using the Champenoise method. A long tradition has resulted in an outstandingly complex and fruity noble sparkling wine. It has a soft straw yellow color with lively, rising bubbles that form a fine frothy rim.

This Brut is a South African Cap Classique with a complex bouquet of delicate floral and fruity aromas of ripe yellow apple and citrus. Nuances of red berries and baked apple add complexity.Fresh, lingering and finely bubbly mousseux supports full-bodied flavors on the palate and provides a mouth-filling sensation before leading into a lingering clean and dry finish.

Vinification of the Kaapse Vonkel Brut Sparkling Wine from Simonsig Wine Estate

Hand-picked, the grapes of the cuvée of Chardonnay, Pinot Noir and Pinot Meunier are transferred into baskets. Pneumatic pressing is followed by fermentation in steel tanks at 15 - 16 °C with specially selected yeasts. The must of Chardonnay grapes is fermented in French oak, bringing complexity to the wine. The bottle fermentation here is not called Methode Champenoise but Methode Cap Classique.
