The basis for the balanced Grillo Sicilia from Sicily are grapes from the Grillo grape variety. After the grape harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Once it has finished, the Grillo Sicilia can continue to harmonize on the fine lees for a few months.
