The Crémant Grande Cuvée 1531 from Sieur d'Arques, which has won several awards, is considered one of the best sparkling wines in southern France and was named after the year in which bottle fermentation was invented or discovered in France.
This Crémant de Limoux appears in a brilliant white gold glass. A fine perlage transports aromas of green apple, pear and honey, as well as floral notes of white flowers. On the palate, the finesse of this sparkling wine is reflected in a fine, restrained acidity structure and an excellent mousseux. Here, too, its freshness unfolds, together with aromas of honey and green apple, as well as an elegant minerality. In a medium finish, the lively character of this classic is once again evident.
Vinification of Aimery Grande Cuvée 1531 Crémant
The award-winning Crémant of the Sieur d'Arques wine cooperative pays homage to an important historical event. The first official mention of a sparkling wine from France dates back to 1531. At that time, monks of St. Hilaire Abbey discovered bottle fermentation by leaving semi-fermented grape must in sealed bottles. This continues to ferment. Since the carbon dioxide could not escape, it dissolved in the wine and made it tingling.
The sites of Sieur d'Arques lie in the Langedoc and are composed of four different terroirs: Autan, Méditerranéen, Océanique and Haute-Vallée form the winegrowing basis for Crémant de Limoux. Depending on their wishes and the weather, the oenologists at the house have access to the yields of the climatically different terroirs. The Crémant 1531 Grande Cuvée is made up of the Chardonnay, Chenin Blanc and Pinot Noir grape varieties. These are harvested earlier than the grapes of the still wines in order to guarantee a firm acidity structure. The base wines are then fermented a second time after the "traditional method", i.e. classical bottle fermentation. The Grande Cuvée 1531 is then left on the yeast for 12 months.
