Vinification of the Tenuta Del Melo Gavi
The balanced Gavi from Italy is a single-varietal wine made organically from the Cortese grape variety. After manual harvesting, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. The fermentation is followed by maturation on the fine lees for several months before the wine is finally bottled.

This organic white wine from Italy is best enjoyed moderately chilled at 11 - 13°C with pasta with sausage dumplings, fruity endive salad or wok vegetables with fish.
