Production of the Fermentacion Lenta of Ximénez-Spinola
The grapes for this sherry made from 100% Pedro Ximénez are harvested overripe and gently pressed.
"Fermentacion Lenta" means slow fermentation and so this sherry is also produced by replenishing the French oak barrels day by day with only 30 litres of must. The musts are then stored in barrels for 6 months.
