In the glass, the Metis Sauvignon Blanc from Klein Constantia offers a dense light yellow colour. When the wine glass is tilted, this white wine reveals a high density and fullness, which is evident in the clear church windows at the edge of the glass. To the nose this Klein Constantia white wine shows all kinds of kumquats, grapefruits, pomelo, lemons and limes. As if this wasn't already impressive, further aromas such as forest soil and sun-warm rock are added by the ageing in stainless steel.
This South African wine inspires with its elegant dry taste. It was brought to the bottle with only 2.1 grams of residual sugar. As you would expect from a wine in this price range, this South African wine naturally enchants with the finest balance in all dryness. This crisp white wine is full of pressure and multi-layered on the palate. The Metis Sauvignon Blanc is wonderfully fresh and lively on the palate due to its present fruit acidity. In the finish, this white wine from the Coastal Region wine growing region, which can be stored well, finally inspires with considerable length. Again there are hints of orange and pink grapefruit.
Vinification of the Metis Klein Constantia Sauvignon Blanc
Basis for the powerful Metis Sauvignon Blanc from Coastal Region are grapes from the grape variety Sauvignon Blanc.
At optimal ripeness, the grapes for Metis Sauvignon Blanc are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After harvesting, the grapes are transported to the winery by the fastest route. Here they are selected and carefully ground. This is followed by fermentation in stainless steel tanks at controlled temperatures. The fermentation is followed by a maturation for 12 months on fine yeast before the wine is finally bottled.
Recommended food for the Metis Sauvignon Blanc of Klein Constantia
This white wine from South Africa is best enjoyed moderately chilled at 11 - 13°C as an accompaniment to wok vegetables with fish, omelette with salmon and fennel or fried trout with ginger pears.
