Vinification of the Cascina Clarabella Èssenza Dossagio Zero Franciacorta

This wine clearly focuses on one grape variety, namely Chardonnay. Only the best grapes were harvested for this wonderfully balanced single-varietal wine from Cascina Clarabella. After the harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. This is followed by fermentation of the base wines. Once the cuvée has been blended, further ageing takes place using the classic bottle fermentation method. The Cascina Clarabella Èssenza Dossagio Zero Franciacorta then matures for several months in the bottle and is finally disgorged.
